Delicious Lentil-Beef Stew Recipe

Who doesn’t love a bowl of beef stew to warm you up during the cold, winter months? And this rich, hearty Lentil Beef Stew recipe will not disappoint you! It is the perfect meal that is full of healthy, nourishing ingredients for the entire family!


2 tbsp. of olive oillentil-beef-stew

2 ½ lb. of cubed beef chuck

1 chopped onion

3 minced garlic cloves

3 large celery stalks (sliced)

1 ½ c. dried green or brown lentils

28 oz. can of crushed tomatoes

6 c. beef stock

1 c. dry red wine

3 bay leaves

1 tbsp. dried thyme

Pinch of cayenne pepper

3 tbsp. fresh chopped tarragon

Salt and pepper


  1. Heat the olive oil in a large pot over medium heat. Sauté the onions for 3 to 4 minutes and then add the beef chuck and garlic.

  2. Next, brown the meat for about 5 to 10 minutes, stirring regularly. Once this is done, add the carrots, celery, lentils, tomatoes, beef stock, wine, bay leaves, thyme, 1 teaspoon of salt and the pinch of cayenne pepper.

  3. Finally, bring the entire mixture to a boil, cover and reduce the heat to simmer for 45 to 60 minutes or until the lentils are tender. Stir in the tarragon and then add in salt and pepper to your liking.
