Strawberry Panna Cotta Columbus Day Dessert

Eat like a sailor this Columbus Day with a fun twist on the traditional Panna Cotta. This recipe is easy to make and is a delicious treat for everyone to enjoy. So, sit back and enjoy this Italian dessert in celebration of the Italian navigator Christopher Columbus!

1 lb. strawberries

½ cup of sugar

1 tbsp. of sugar

½ tsp. vanilla extract

1 pack of unflavored gelatin

¼ cup of water

1 ½ cups of whole milk

1 cup of heavy whipped cream

Sliced strawberries (as a garnish)

 

Let’s get started!

cooks-innovations-whipped-cream-columbus-dayFirst things first, lightly grease eight 4-ounce cups with non-stick cooking spray.

Next, purée the pound of strawberries and ½ cup of sugar in a blender until the mixture is smooth. Then, press the mixture through a sieve into a bowl to remove any seeds. Once this is done, stir in the vanilla extract. Remove 1 cup of the panna cotta and reserve the remaining purée.

Sprinkle the gelatin over the ¼ cup of water in a small cup and let it stand for 5 minutes to soften. Then place the cup in a small skillet of simmering water and stir the gelatin until it cooks-innovations-penna-cotta-columbus-dayis dissolved. In another pan, simmer the milk and then stir it into the dissolved gelatin. Now, you will stir in the reserved cup of strawberry purée and the whipped cream until the mixture is well blended.

Pour into the greased cups, cover, and chill for about 4 hours or until they are firm. When ready to remove from the cups, run a small knife around the cup and flip over onto a plate. Top your Panna Cotta with the reserved strawberry sauce and a few sliced strawberries as a garnish and then sit back and enjoy the delicious dessert!
